About this Recipe

A whole roasted cauliflower makes a stunning addition to any meal, especially a holiday dinner! This dish can be served as a side dish along with a main or the cauliflower can be the centerpiece. Either way, this dish is sure to impress.

I never really enjoyed cauliflower until I started cooking it this way. Now I love it! Especially, with a little char on the edges.

The best part is, this recipe could not be more straightforward! The prep is fast and most of the “time” for this recipe is backing time.

Trader Joe's Ajika Georgian Seasoning Blend

You can season this dish any way you like; you really can’t go wrong. This recipe is inspired Georgian-Abkhazian cuisine and spiced with ajika. You can get Ajika Georgian Seasoning Blend at Trader Joe’s or substitute some crushed chili pepper, coriander, cumin, garlic, and salt.

Ingredients

  • 1 whole cauliflower head
  • 3 Tablespoons olive oil
  • Trader Joe’s Ajika Georgian Seasoning Blend

Optional for topping:

  • Fresh parsley
  • Sauce (I made a greek yogurt, garlic, and lemon sauce)

Cauliflower is a vegetable packed with vitamins and minerals. It is naturally high in fiber and B-vitamins, and antioxidants. Some studies suggest that cauliflower can boost the immune system, aid in memory health, assist in weight loss, and support hormone balance in both men and women. 

Roasted cauliflower will keep for a few days in the refrigerator. I have never tried to freeze so I am unsure how the texture would hold up.

Step-by-Step Instructions

Step 1
Preheat the oven to 375°F. Carefully trim away the leaves and stem while keeping the head intact.
Step 2
With your hands, rub olive oil on all sides, top and bottom, of the cauliflower. Season both sides of the cauliflower. I like to add some garlic inside the bottom of the cauliflower for some extra flare.
Step 3
Place the cauliflower florets side up on a cast iron skillet or in a dutch oven. Cover and cook for 30 minutes.
Step 4
Remove the lid and roast for an additional 20-30 in the oven until the cauliflower is tender on the inside.
Step 5

For an extra char turn on the broiler for about 5 minutes. Be careful not to burn the cauliflower head. 

Step 6
Drizzle your favorite sauce and fresh herbs to serve.
