About this Recipe

As early as I can remember, my family has carved pumpkins for Halloween. I remember my PawPaw using a massive, and I mean massive, kitchen knife to help us grandkids carve the pumpkins! This was before the nifty carving kits they have now.

I continue to carve pumpkins even as an adult. It’s a festive tradition I still enjoy doing. My friend Paulina would always have a pumpkin carving get-together. She always carved the best pumpkins! #iykyk

She also would make the most delicious chunky pumpkin soup. I’ll have to get her recipe… You can find my creamy pumpkin soup recipe here! I recommend topping the soup with these traditional roasted pumpkin seeds.

Ingredients

  • Seeds from your pumpkin 
  • Olive oil for coating
  • Salt
  • (Optional- you can add other spices as well but I am a purist. Some other options could include garlic powder, everything bagel seasoning, pepper, cayenne, or smoked paprika.)

Store in an air-tight container for up to 2 weeks or freeze for longer.

Step by Step Instructions

Step 1

Preheat oven to 350°F

Step 2
Wash pumpkin seeds in a colander to remove the pulp and fibers. Thoroughly dry with a towel (or don’t).
Step 3
In al bowl combine pumpkin seeds, olive oil, and salt.
Step 4
Lightly grease a sheet pan with olive oil. and spread the seasoned pumpkin seeds on the sheet pan.
Step 5
Bake until the seeds are toasted and crunchy, about 12 to 15 minutes. Stir every 5 minutes for even toasting.

 

Step 6

Transfer the roasted pumpkin seeds to a bowl to cool.
